Meat Standards Australia (MSA)



Meat Standards Australia (MSA) is a grading system developed to improve the supply of consistently high quality meat to the beef consumer. MSA is a ‘tenderness guaranteed’ grading program that grades beef based on eating quality.


MSA was developed using consumer taste tests of beef produced over a wide range of cattle breeds, management practices, processing systems, ageing periods and cooking methods for the main cuts of meat. The MSA system grades each muscle (cut) on eating quality, with regards to tenderness, juiciness, flavour and overall liking. The grade can be 3, 4 or 5 star and each cut is labelled accordingly.


MSA certified graders assess carcase attributes collected during processing using a uniform set of standards, and collate information provided by the beef producer, which is then entered into a computer program. Results of grading are allocated to the carcase to produce a MSA score, and a grade is allocated to different cuts along with days of aging required to achieve the grade and the suggested cooking method.


MSA licensed processors ensure all their systems comply with MSA program requirements. The key factors are pre-slaughter handling, processing treatments, carcase grading by a MSA certified grader and product labelling.

Grass-Fed and Grass-Finished



Coral Coast Beef is proud to be compliant with the requirements set forth by the Cattle Assurance Systems as Certified Pasturefed.


Our predominantly Black Angus cattle are bred and raised at the Home Farm on pastures near to the twin towns of Dongara Port Denison on Australia’s Coral Coast. Grazed on a mixture of annual and perennial grasses in large paddocks supplied with fresh clean underground water, they are grass-fed for their entire lives and meet the Australian PCAS standards for grass-fed cattle classification.


The Home Farm layout has been designed to focus on stress-free stock handling and the wagon-wheel layout of the paddocks enables easy rotation of cattle onto fresh grass and close access to fresh clean water at all times with a minimum of handling. Stockyards are purpose-built to ensure minimal stress and efficient operation during handling required for health checks and monitoring.


Historically the land had been developed for the rotation of wheat and sheep. More recently it was discovered that by planting perennial grasses mixed with annual varieties in some sandplain areas, and re-establishing tree cover for shelter, a more productive and sustainable farming system could be created for the production of high-quality beef cattle. Grass varieties include Seradella (which fixes Nitrogen in the soil), Rye, Gaton Panic and Rhodes.







HGP-Free and Antibiotic Free



Coral Coast Beef is certified Hormone Growth Promotant (HGP) free and Antibiotic-Free.


Our grass-fed and finished beef comes from our predominantly Black Angus cattle that have had access to roam and graze open pastures as described above. The cattle have not been confined for the purposes of intensive feeding for production and are free from Hormone Growth Promotants (HGP) and antibiotics.
